Basil-Caper Hummus
First things first, right? Hummus is a super yummy, super healthy accompaniment to pitas, broccoli, and pretty much anything else. I created this one on a whim. Its ridiculously easy - just 1 step! I used dried garbanzos that I soaked overnight, then boiled for an hour, but you can just as easily use canned ones, after rinsing!
Ingredients:
3 c. cooked garbanzo beans
1/3 c. lemon juice
1/2 c. olive oil
1/2 c. water (add to get the correct texture)
1/4 c. tahini 8 cloves garlic (I LOVE garlic.)
handful of fresh basil - to taste
1 t. salt
1/2 t. paprika
1 t. cumin
1 T. capers
1 T. vinegar from caper jar
Instructions: Place all ingredients into blender, and blend until smooth.
Quite frankly, it's delicious. I broke my blender's motor(it was a cheap one) on this one, so I moved it over to the food processor, so it wasn't quite as smooth as I'd like, but c'est la vie. It's pretty darn tasty, so I don't really care. I plan on putting this on some crackers with avocado, red onions, and maybe a drizzle of honey.
